IGT Veneto Passito Rosso "ViViMi" – Le Pignole Rossi fresh and smoothViViMi: live it, feel it, drink it. A red passito for meditation made from Tai Rosso grapes air dried in a controlled environment for 4 months, then pressed, cold macerated (5 6C) for 5 days, and fermented for 25 30 days at 16 17C. The aging process is long and intricate: 20 months in French oak barriques and tonneaux, then at least 4 months in stainless steel tanks, and 5 6 months of rest in the bottle before release.
