We would pair it with a light onion stuffed agnolotti, or potatoes au gratin with shaved black truffle or truffle oil. The wine is vinified whole cluster, and fermented at very low temperatures in large wood barrels and cement tanks. 10% of the juice sees a long maceration, adding slightly more fruit and texture to a usually acidic light bodied white.
