Alto Canto Tequila Blanco mexican Unlike most clear rumsThis Blanco tequila from Tequila El Roco (NOM 1636) in the Sierra del Tigre, Jalisco, crafted by Maestro Tequilero Juan Reyes, is made from 100% certified organic Azul (Blue Weber) agave grown at an elevation of 9,000 feet. The agave is cooked for 72 hours in a brick oven, milled using a traditional stone tahona, and spontaneously fermented for roughly 80 hours with fibers included in open air wooden tanks using only ambient yeast and spring water.
