Alice et Olivier De Moor Bourgogne Aligoté, 2023 mendicino creating a supple and beautifulThis is 100% Aligot from a parcel coincidentally called "Champagne" in the Burgundian village of Chitry le Fort. The wine is aged in large 228 liter Burgundian barrels for 11 months on its lees without racking. The result is extremely textured, juicy, ripping Aligot. We would pair it with poisses, a creamy and soft washed rind cow's milk cheese from Burgundy, spread on a hunk of toasted sourdough or crunchy petits toasts.
