La Hacienda de Doña Francisca 2021 Terroirwijn uit Jerez After fermentation without temperature control100% Palomino Fino. The vineyard, La Callejuela, is part of Pago de Hornillo just outside Sanlcar de Barrameda and very close to the bodega. It is south southwest facing with the direct impact of the Poniente (cool, damp west wind), which results in ABV of up to 12%. The soil is pure Albariza de Tosca Cerrada (rocky chalk) and ensures a middling concentration and middling minerality. Wood ageing: seven months under flor in 100% used sherry barrels.
