The winery is located in the heart of Chablis on a large estate, a former residence of the monks of Pontigny Abbey, consisting of a large 19th century building and a partially underground cellar built in 2016. The vinification is done without any input, without sulphites, with native yeasts and the maturation of the wines in tanks and barrels. The wines are not fined or cold
